Furrtek has just opened a wait list for his Virtual Boy video-out board. The kit will cost around $50 USD and supports both RGB and VGA modes: http://furrtek.free.fr/virtualtap/
VGA Output will be a “2x” 800×600 mode that runs at 768×448
RGB Output will have a narrower aspect ratio to fit the Virtual Boy’s 384×224 resolution into a 320×240 “240p” signal.
Both run at 60fps and support multiple color palettes, with the default (of course!) being red:
